Give these heathly "energy bars" a whirl...250g chopped dates / 75g brown sugar / 50g plain flour /50g porridge oats / 4 tablespoons olive oil or rapeseed oil / 1 teaspoon baking powder / 1 teaspoon mixed spice / 1 teaspoon vanilla extract or essence /2 large eggs / 175g chopped pecan nuts- Put ingredients into a large bowl in the order above and mix thoroughly with a wooden spoon.- Grease a baking tin, line with greaseproof paper and pour in the mix- Spread mixture to even thickness- Cook for around 30 mins at 180oC- Leave to cool for 10 mins & then turn out onto a wire rack and leave to cool completelyBadda bing!!
